It all begins with the clean crisp waters of the Pacific Ocean. We source our sea water from the pristine waters of Northern California, packed with all the minerals and elements found in a thriving ecosystem. That water is triple filtered and fire evaporated to a concentrated brine. Salt crystals then begin to form on the surface of the brine, creating our characteristic flakes. Hand harvested, this process yields a small batch, premium flake finishing salt.

The Science Behind The Flake
Flake salt is a truly unique form of salt. Salt, or sodium chloride, naturally wants to form tight cubes when it crystallizes. Most salts are dense cubes ground down to different grain sizes.
Flake salt is formed when sodium and chloride ions are forced to bond in a way that isn’t a neat little cube. Instead they form what are called hopper crystals, a pyramid shaped step lattice.
By evaporating the brine at just the right temperature, in just the right conditions, the salt crystals forming on the surface crystalize faster on the edges than they do in the center. This creates the characteristic pyramid shaped flake.
This unique shape has more surface area and less volume compared to the dense cubes seen in other types of salt. In turn, this creates a stronger salty taste that doesn’t linger, all while using less salt.
